Places of meaning.
Hospitality with purpose.

Meaningful places bring people together. They have an authentic point of view—and a life shaped by the individuals who gather there.

Culture is created in the collision of individuals: guests, hosts, artists, neighbors, and the people who make a place their own. The room sets the context. Hospitality makes the connection.

Kilvert & Co. helps owners, developers, and hospitality brands create the conditions for that life to take hold. We connect identity and experience with commercial discipline and operational execution—so places of meaning can endure.

Our Expertise

One integrated perspective.
Three connected disciplines.

01

Advisory & Strategy

Clarity before commitment.

Define the opportunity, test the economics, and establish a practical path forward. We bring an operator’s perspective to decisions about place, investment, and performance.

  • Market & location analysis
  • Financial feasibility & operating models
  • Investment diligence & operator selection
  • Performance diagnostics & turnaround strategy
02

Concept Development
& Brand Expansion

Identity, thoughtfully developed.

Translate a compelling idea into an experience with a clear point of view. For established brands, growth begins with understanding what must be preserved—and what can evolve.

  • Concept positioning & guest experience
  • Development planning
  • New-market entry & brand adaptation
  • Licensing & partnership strategy
03

Operations & Management

Ambition, made operational.

Build the team, systems, and service culture to deliver the vision consistently. We connect the guest experience with the financial and organizational realities behind it.

  • Opening preparation & deployment
  • Leadership recruitment & development
  • Service standards & operating systems
  • Management oversight & financial accountability

When to Engage Us

At the moments
that shape a business.

01 / Evaluate

Before you commit.

Test a site, investment, or operating proposition. Understand the market, the economics, and the conditions required for success.

02 / Develop

When an idea needs form.

Define the positioning, guest experience, and operating model that connect a distinctive concept to its place and audience.

03 / Open

As opening becomes real.

Align budgets, leadership, systems, and service standards. Bring the critical path into focus and prepare the team to deliver.

04 / Improve

When performance falls short.

Examine the relationship between revenue, costs, service, and leadership. Establish priorities and support their execution.

05 / Expand

Before the next chapter.

Assess new markets and partners. Develop a path for growth that protects the identity that made the original meaningful.

Our Approach

Character is felt.
Excellence is built.

Creative identity, guest experience, and business performance belong in the same conversation. Our role is to hold them together—through decisions that are thoughtful, commercially grounded, and achievable in practice.

  1. 01Understand what makes it matter.
  2. 02Establish what makes it viable.
  3. 03Build what makes it work.

How We Work

Personally led.
Thoughtfully assembled.

A clear point of accountability, with the right expertise for the work.

Corwin leads each engagement. The work begins with ownership objectives, the guest experience, and an honest assessment of the business. Together, we define the scope, responsibilities, and decisions that need to be made.

Where specialist input is needed, we work with ownership to identify and coordinate the appropriate expertise—culinary, beverage, design, finance, or technical. The team is assembled around the assignment, with responsibilities made explicit.

Understand

Listen, review the evidence, and define the opportunity.

Align

Set priorities, responsibilities, budgets, and a practical plan.

Deliver

Stay close to implementation, review performance, and adapt.

Founder & Principal

Corwin
Kilvert

A career shaped on the floor.
A perspective across the business.

Corwin’s experience spans intimate neighborhood institutions, celebrated dining rooms, destination hospitality, and live music venues. It has shaped a conviction: a place earns its relevance through how it makes people feel—and sustains it through how well it is run.

His professional experience includes Roman and Williams Guild, Le Coucou, Raoul’s, The Django at The Roxy Hotel, Eleven Madison Park, and Shukette, as well as Scarpetta Beach at Gurney’s Montauk, where he served as Sommelier from 2015 to 2017.

Kilvert & Co. is an independent practice founded on that experience. Corwin brings a working knowledge of the dining room and the wider business to each assignment, with direct involvement from the first conversation through execution.
